Have I Always Liked Mushrooms ?

This is a frequent question & the quick answer is NO. I didn’t even know that such variety existed. When there was a mushroom option on a menu, I never selected it. It wasn’t until I started hiking and researching my finds that I was shocked at how many local edibles existed! After a deep dive into YouTube sites like ‘Learn Your Land’, I became even more inspired seek out local gems.

I also found so many recipes on how to cook mushrooms the correct way. Did you know the trick to cook crispier mushrooms involves only one step: Put the mushrooms in to cook WITHOUT oil first. The moisture will release from the mushrooms and then start to absorb back in. THEN add the oil and No More Soggy Mushrooms!

Now I find myself experimenting with so many recipes that substitute mushrooms instead of meat & seafood. A seafood allergy in Maryland seems to be torture for so many. Some have even disclosed that they take allergy medications prior to eating crabcakes and other shellfish just so they can satisfy the craving.

Lion’s Mane Mushroom faux Crabcakes is a delicious option that will shock you that it is Not Real Crabmeat. King Mushrooms can be sliced into scalloped shaped pieces and marinated to taste just like scallops.

Gourmet mushrooms are naturally high in vitamins, protein, betaglucans, and fiber with almost no fat—just what you choose to add in.

Now I find myself making my favorite dishes to bring to events and see if anyone can tell that they are actually eating mushrooms. The unanimous response is being pleasantly surprised with statements such as, “It tastes so good” or “I can’t believe I’m eating a mushroom”. I have even heard “I think I prefer this over the real meat”.

Mushrooms are easier to digest than meats, especially if you are allergic to that type of meat ;-)
